Prof. Dr. Jafar M. El-Qudah is a Full Professor at Al-Balqa Applied University in Jordan, where he has been a key faculty member since 2005. He earned his Ph.D. in nutritional biochemistry in 1997. Thesis: "Biochemical Researches on the Nature, Nutrition, and Utilization of Carotenoid Pigments from Vegetables Cultivated in Jordan." Babes-Bolyai University, Cluj-Napoca, Romania. He began his academic career in 1998 as an assistant professor at the Private Applied Science University's Faculty of Medical Sciences, Food and Nutrition Department in Amman, Jordan. In 2007, he worked as a postdoctoral research scholar in the Carotenoids and Health Laboratory at Tufts University's Jean Mayer USDA Human Nutrition Research Center on Aging (HNRCA) in Boston, Massachusetts, USA. 

With over three decades of experience, he has held a variety of leadership positions, including member of the faculty board and head of the nutrition and food science departments at several universities in Jordan and Saudi Arabia. Professor El-Qudah is an internationally recognized nutrition expert. His research interests include the bioavailability of vitamins A and carotenoids, clinical nutrition, nutritional status, and community nutrition. He has authored over 50 articles in Scopus and ISI-cited journals, as well as several books and chapters on nutrition.
