Non-enzymatic glycation is a post-translational modification of proteins that leads to protein crosslinking, aggregation, conformational changes, etc. Chemical reaction of sugars with proteins (Maillard reaction) leads to formation of glycated adducts, known as Advanced Glycation End Products (AGE).
